It is also the recipe I learnt to bake during the lock-down period when I could not depend upon takeout for potential exposure during pandemic.
The main ingredients of gluten free banana bread recipe involve banana, zucchini and white flour, but we can customize it to make it a little more moist for juicy bites.
Note: For those dealing with diabetes can avoid white flour and replace it with whole wheat. But here I am adding white flour as I am not diabetic.
Some diabetic patients and weight watchers believe banana contains gluten, but it is safe for diabetic people to eat a moderate amount of banana medical news today says.
Ingredients for Gluten Free Banana Bread Recipe:
- Vanilla extract
- Olive oil
- Three Bananas
- White Flour (Don’t use if for Diabetic person)
- Sodium Hydrogen carbonate (Baking Soda)
- Whole wheat flour
- One Zucchini fresh (or Canned Zucchini)
- Two Eggs
Lets get to work, the first step I do is to peel zucchini over my cutting board, using a peeler. Chopping zucchini in much smaller pieces would be good to mix in the bread dough.
Why use zucchini in bread? It has always been controversial to add zucchini in the bread.
Zucchini has always been a compulsory ingredient in folk medicine to treat many health conditions like aches and cold. It has a healthy dose of protein, fiber, manganese, vitamin k, Vitamin B6 and it helps boost your immune system and vision as well.
To make our bread healthy and vegan I am using zucchini, and you can get it from nearby grocery store. If you don’t find fresh one, you can add from canned zucchini.
Our recipe will need 3 bananas. Peel all of bananas and add to a mixing bowl. You can mash it using electric mixer but here I am using fork. Mash it till it looks like soft paste.
Next step is to add 2 large eggs to banana paste and mix them together. Eggs are vital ingredients of mostly baked item, to make breads soft.
Its preferable to use olive oil, but you can use general cooking oil as well. 4 to 5 tea spoon of olive oil is enough.
Baking soda (Sodium Hydrogen Carbonate)
Lets make our bread spongy by adding 1 and half teaspoon of baking soda to our mixture.
We need to add 3 tablespoon of cinnamon to the mixture. Its up to your preference, you can skip cinnamon but I am adding it for aromatic feel.
We need our banana bread macerated so I will add a tablespoon of vanilla extract. Now mixing all the material using fork till it gets uniformity.
Now add zucchini that is chopped in the initial step.
Adding and Mixing Flour
Now add to the mixture ¾ cup of wheat flour (that is around 0.75 cup) as well as the same amount of white flour. Mix all the flour gently or gradually and stir along. Now knead the mixture all together to make dough. Now it will start smelling good.
Note: Add wheat flour instead of white flour if you are facing medical condition like diabetes.
Baking Banana Bread
Once dough is prepared, lets take a non sticky baking tray and and fill it with dough. There is no need of parchment paper in non sticky baking tray.
Now get your oven ready and set temperature to 180 degree, place the tray inside for 50-60 min. Once the said duration is reached, our own homemade class gluten-free banana bread recipe is ready to serve on the breakfast table that is delicious and spongy soft as well.
